Strawberry Thyme Spritz

Let’s Make a Strawberry Thyme Spritz mocktail

If you’re looking for a fresh, fruity, and slightly herbal mocktail that feels just as special as it tastes, you’re going to love this Strawberry Thyme Spritz. It’s the perfect drink for spring and summer afternoons, weekend brunches, or any time you want something a little fancy without the alcohol.

The combination of sweet strawberries, bright citrus, a touch of honey, and the delicate aroma of thyme makes this spritz feel light, refreshing, and just a little bit extra — in the best way.

Ingredients

• 4 strawberries

• 1/2 oz honey

• 1 oz orange juice

• 1/2 oz lemon juice

• Top with TÖST (a non-alcoholic sparkling beverage) or Club Soda

• Garnish: orange slice and fresh thyme

How to Make It:

  1. Muddle the strawberries:In a cocktail shaker or a sturdy glass, muddle the strawberries with the honey until the berries are completely broken down and the honey is mixed in. This releases all the sweet juices from the strawberries and infuses the honey with fresh flavor.

  2. Add citrus:Pour in the orange juice and lemon juice. Give it a quick stir or a gentle shake to combine everything.

  3. Strain and pour:Strain the mixture into a glass filled with ice. This step keeps the drink smooth and free of large strawberry pieces.

  4. Top it off:Top your glass with TÖST or club soda. If you want it a little sweeter and more celebratory, TÖST is amazing. If you prefer super light and crisp, club soda works beautifully too.

  5. Garnish and enjoy:Add a sprig of fresh thyme and a sliced strawberry or orange!

Tips for the Best Strawberry Thyme Spritz:

  • Use ripe strawberries: The riper, the sweeter and juicier your drink will be.

  • Warm your honey slightly if needed: If your honey is thick or crystalized, pop it in the microwave for just a few seconds to make it easier to mix.

  • Customize your bubbles: TÖST has a hint of white tea and citrus that pairs beautifully with this drink, but you could also use flavored sparkling water like strawberry, lemon, or even a light herbal one if you want to play with the flavor even more.

This mocktail is sweet but not overpowering, citrusy without being sour, and full of fresh, vibrant flavors. The thyme adds a subtle, elegant twist that makes it feel a little elevated — perfect for sipping on the patio, serving at brunch, or even just treating yourself to a special moment during the week.
